From legal briefs to cocoa beans: A Chicago couple’s award-winning journey in organic chocolate making

In the quaint suburb of Norridge, Illinois lies Chocs ‘N Boxes LLC, a unique and innovative chocolate shop that’s a symbol of a remarkable journey from professional careers in health care and law to the pinnacle of the international chocolate world. This shop, owned by an immigration attorney and a nurse, is not just a purveyor of fine chocolates. It’s the result of passion, sustainability and a deep commitment to community upliftment.

Their journey into the chocolate industry began in January 2016, driven by a desire to improve the livelihoods of farmers in Samar Island, Philippines. The low prices fetched by cacao beans spurred them to consider alternative ways to increase the value of their produce. They embarked on a venture that would see them intercropping coconut farms with cacao trees, a move that would lay the foundation for their future success in chocolate making.

The turning point came amid the challenges of the COVID-19 pandemic. Unable to travel, the couple decided to fully commit themselves to mastering the art of chocolate making. They enrolled in the Chicago Chocolate Academy, where they trained under the guidance of renowned Chef Yann Migault. This period of intense learning and experimentation was crucial in shaping their understanding of the craft and the nuances of chocolate flavors.

Chocs ‘N Boxes opened its doors in July 2021 amid a world still grappling with the pandemic’s impact. The shop is a culmination of their efforts, showcasing chocolates made exclusively from the harvest of their own farm. The chocolates are not just confectionery items but embodiments of the couple’s philosophy of sustainable and organic farming practices.

Their cacao farm, the Apoy Benit’s Cacao Agricultural Farming, stretches across 6.8 hectares on Samar Island. This farm is more than just a source of raw materials; it’s a testament to their dedication to organic farming. Certified by the Organic Certification Center of the Philippines, the farm uses eco-friendly methods, including vermicast, organic fish amino and seaweeds fermented with molasses. This approach aligns with their commitment to environmental sustainability and ethical farming practices.

The couple’s efforts have not gone unnoticed. Their chocolates have garnered critical acclaim, winning multiple awards at the prestigious International Chocolate Awards. The accolades include a Bronze in the World category and a Silver in the Americas category for their Calamansi Caramel Bonbon; a Silver in the Americas category for their HAMILI 50% Dark Milk Chocolate, BAHANDI 40% Milk Chocolate, Blueberry Compote – Lychee  Bonbon, and Pili-Dates Praline; and a Bronze in the Americas category for their Caramelized Hazelnut Milk Chocolate Ball, Dark Chocolate with Orange Peel, and Kape Krunch Milk Chocolate bar.

But their mission extends beyond creating award-winning chocolates. They are passionate about inspiring and educating other farmers in Samar about the benefits of cacao cultivation and organic farming. Through their initiatives, they provide resources and knowledge to local farmers, encouraging a shift from reliance on expensive imported fertilizers to sustainable, organic alternatives.

One of their significant contributions is the development and distribution of accredited cacao seedlings. This initiative addresses a critical gap in the local agricultural sector, making quality cacao plants accessible to farmers in Samar and the neighboring regions. By doing so, they hope to ignite a transformation in the local agricultural landscape, moving towards a more sustainable and profitable future.
