About a dozen taste-testers gathered Thursday at Kubo Sushi in Elgin, where the owner minced copi into an Asian-inspired slider and plans to create other meals with it. Copi is the new moniker for the maligned Asian carp, an invasive species that has been overwhelming waterways in the Midwest.
